We think Bob is allergic to dairy now as well as gluten.  I've mixed feelings as to what, specifically in dairy products it could be.  It could be casein, the protein that is shaped similarly to gluten, or lactose, an allergy more likely to strike the already fragile &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;Celiac&lt;/span&gt; digestive system.  &lt;a href="http://jyesika.blogspot.com/2008/12/dirty-eating.html"&gt;I've written much more elaborately about it here.&lt;/a&gt;  If he is only allergic to lactose it is a much more manageable allergy.  Humans have evolved many ways of changing dairy products into lactose free foods (hardened cheeses, yogurt etc.) which would mean with some careful planning we could still cook with some dairy products.  If it turns out he is allergic to casein, it's another whole food group we've got to get rid of.&lt;br /&gt;I've also decided to stop feeding our hard earned moneys into the disgusting meat-packing industry.  I haven't decided if this will extend to just halting meat consumption, or limiting it to a few locally raised animals insured a healthy outdoor farm life and a humane death.  Honestly, I am practical.  Bob's &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;Celiac's&lt;/span&gt; disease is far more important than any morally based dietary restrictions I might have.  I will consider raising our own meat or insuring our meat is local.  I will continue to eat seafood, attempting to eat locally caught fish or responsibly caught fish.  However, my stance on the actual meat-packing industry stays firm.  It's gross and horrible. &lt;br /&gt;We are going to visit my dad in Colorado in the beginning of February, and do not intend to get Bob checked for a casein/lactose allergy until after we get back. The only company that thinks they *might* be able to give us service is very slow in response.  It's very frustrating, especially with the amount of research that a GF life (with variety) requires.  Blergh.&lt;br /&gt;&lt;br /&gt;My dad recently started working at a medical lab, and I went and visited him on our vacation.  They drew my blood and did blood tests.  I'm a type A+ and my blood is healthy.  I even got to look at a slide with my blood cells!  It was very cool.  While there I talked to the Dr. at the lab who recommeded I read "Eat Right for Your Type" a dietary book based on the idea of how human blood types evolved- from type O (the original blood type) to living in a community and being dependent on grains and crops (type A) to domesticating and herding animals (type B).  Type AB is more recent resulting on a mash of types A and B.  I'm not very far into the book and I'm wishing we'd blood typed Bob (I'm almost positive he'd type O, as often type O and B have trouble with wheat gluten).  I've thought so much about his intolerances that I'd never given real thought of my own!   Type A are supposed to stay away from meat (which I don't particularly like any way) and do low stress exercises such as yoga.  There are many more strictures, but I've really not read that far into the book.  However, so far I'd recommend you pick it up.   Surely the anthropological study of the movement and evolution of blood types is enough to interest anybody (or anybody with an anthropology degree- read: me).&lt;br /&gt;&lt;br /&gt;So we are back to the grind after weeks of prep for our trip. We are saving up for a big trip at the end of August, and so are trimming down our grocery list, and attempting to trim down ourselves. When the wrap is soft pull out and stretch on a dish towel, so it doesn't stick to your work surface. Make sure they don't burn!  Meanwhile start frying the rice.  Place rice in large wok or deep skillet.  Drizzle the pan with olive oil and 1 tbsp butter.  Cover the rice and turn periodically.  Salt liberally.  It takes 15 minutes or so to properly fry rice. &lt;br /&gt;&lt;br /&gt;Meanwhile make the sweet and sour sauce.  Combine sugar, rice vinegar, lime juice, ginger, red pepper flakes and salt. Push rice to one side and break 4 eggs on the other side.  Do not mix it in the rice until completely cooked, if you combine it together while it is at all runny it will be gross. We keep our GF bread in the freezer, as it's not exactly an ingredient that we often use.  Crumble it up by hand or grind it into small crumbs (they stick better) with a food processor.&lt;br /&gt;&lt;br /&gt;Meanwhile, make the dressing.  Separate an egg.  Preferably an egg that is familiar to you (read, homegrown) as you are going to be eating the yolk raw.  In a food processor put egg yolk, vinegars and sugar and blend.  Supposedly this sort of "cooks" the yolk.  Slowly pour in oil until dressing is thickened.&lt;br /&gt;&lt;br /&gt;Cut your mozzarella cheese into coins using unflavored dental sauce or a sharp knife. Dip into a bowl full of the bread crumbs. Plate greens and add mozzarella on top.  Sooooo delicious, you won't mind the raw egg. I didn't alter this one bit, but halved the recipe, which was a perfect size for two people.  One recommendation, a larger opening to your serving vessels.  I have margarita glasses that would have been a better choice.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.marthastewart.com/recipe/blackberry-fool"&gt;Martha's Blackberry Fools&lt;/a&gt;- serves 2&lt;br /&gt;1 cups blackberries, plus more for garnish&lt;br /&gt;1/4 cup sugar&lt;br /&gt;1 teaspoon fresh lemon juice&lt;br /&gt;1 cups heavy cream&lt;br /&gt;1/2 teaspoon pure vanilla extract&lt;br /&gt;&lt;br /&gt;Blend berries, sugar and lemon juice in the blender.  Pour through a fine mesh strainer to remove all seeds.  Note, I used a splatter screen and it involved real work getting the berry mixture through it... I'd recommend something a bit more porous than that.&lt;br /&gt;&lt;br /&gt;Whip cream and vanilla in kitchen aid until stiff peaks form.  Fold whipped cream into berry sauce.  Put in serving glasses and chill. Simmer until rice is light and fluffy and water is gone.  To time meal properly finish boiling rice before beginning the chicken.&lt;br /&gt;&lt;br /&gt;Trim chicken breasts of obvious fat and cut them into bite sized pieces.  Cook on medium heat until partially cooked.&lt;br /&gt;&lt;br /&gt;Mix together sugar, tamari, ginger, oil, garlic and cornstarch. Fry rice, stirring occasionally for 10 minutes or so. Add chopped veggies, onion, green onion and red pepper.  Cook until red onions are translucent.  Make sure not to burn the rice, meanwhile, but do not mix it with the veggies until they are done cooking.   Then mix veggies in and push rice to the side again.  Crack 4 eggs into exposed part of the wok.  Mix and scramble periodically with a chop stick. This can barely be claimed as a unique recipe, but sometimes its hard to come up with even quick and easy gluten free menu options, so I figure I'll share.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Salmon, Rice and Spring Salad Recipe -15 minutes&lt;/span&gt;&lt;br /&gt;skinless fillet of salmon, 1 per person&lt;br /&gt;1 lime&lt;br /&gt;dash of lime pepper spice&lt;br /&gt;dash of garlic salt&lt;br /&gt;dash of cracked rock salt&lt;br /&gt;dash of pepper&lt;br /&gt;1 cup rice&lt;br /&gt;Spring salad mix- 1 bag&lt;br /&gt;3 tbsp red white vinegar&lt;br /&gt;3 tbsp Extra virgin Olive Oil&lt;br /&gt;Garlic&lt;br /&gt;1 tbsp Dijon mustard&lt;br /&gt;&lt;br /&gt;Cook rice, bring 1 cup rice with 2 cups water to a boil.  Cook until fluffy and water has boiled out.  Quite truthfully my rice making skills remain woefully inept.  I know there is a perfect rice/water ratio, but I inevitably add more water to my rice as it drys out before the rice is tender enough, so generally cook rice with a bit more attention than I know is good for it.&lt;br /&gt;&lt;br /&gt;Sprinkle salmon with lime pepper spice, garlic salt, salt and pepper.  Cook on both sides 2-4 minutes on medium heat, until opaque. Follow the pancake instructions and lovely, fluffy, tasty pancakes will result. &lt;br /&gt;When making waffles we follow the waffle instructions fairly closely, but I whip the egg whites into soft to somewhat stiff peaks and then carefully fold them in with the other ingredients at the very end.  We also add a touch of baking powder to give them a bigger boost.  This results in very light and springy waffles.  You can add some fruit or chocolate chips for a variety.  I'll post a how-to guide (we are proud of our waffle success) the next time we make waffles.&lt;br /&gt;When I adapt a non-GF recipe into a GF recipe I generally use Pamela's mix to substitute half of the required flour and then use a variety of other flours (which vary depending on what I'm making).&lt;br /&gt;From my reading of other GF blogs it seems that other accomplished GF chefs are also using Pamela's all the time.  So if you have been recently diagnosed and feeling lost, try Pamela's first.&lt;br /&gt;&lt;br /&gt;Pamela's is such a staple in our GF arsenal that I've been contemplating setting up an automatic delivery from Amazon (where it is discounted a bit) every three months or so. For faster preparation (and avoiding burnt fingers from impatience!), you can lightly pulse in the food processor, but be careful not to liquidate the chicken!   I prefer it fork shredded.&lt;br /&gt;&lt;br /&gt;In a bowl combine:&lt;br /&gt;1/2 cup sour cream&lt;br /&gt;1/4 cup light mayo&lt;br /&gt;2 tbsp lime juice&lt;br /&gt;2 tbsp chopped garlic&lt;br /&gt;1/2 cup shredded "mexican" cheese&lt;br /&gt;&lt;br /&gt;Stir mayo, sour cream and lime juice until smooth. Cut red potatoes into half coin shapes.  Spray the cookie sheet with olive oil (or brush) and arrange potatoes. Follow the directions on the Chebe package.  We make the crust into squares to better fit onto the grill.  Cook in the oven at 375 for 8-ish minutes, until almost done but still relatively pliable.  The assembled pizzas will be finished over the grill. Meanwhile, cut Zucchini and Summer Squash in half and peppers into forths, as depicted below.  Spray or brush with olive oil. Take off grill and cut mushrooms, squash, peppers and zucchini into thin strips. I've started making a menu each week.  I find interesting recipes, print them off, compile a list of needed ingredients and ONLY BUY THOSE THINGS at the store.  I generally find about 7 different menu items and then post the menus on the fridge.  Now, instead of staring into the fridge we can choose from the list.  Each day the decision gets easier.  I also list the estimated time it takes to make a meal (as my hubby and I both work, and I generally don't want an hour in the kitchen after a day in the office) to better determine what to eat on a particular night.&lt;br /&gt;&lt;br /&gt;This weeks Menu:&lt;br /&gt;&lt;br /&gt;         Grilled Veggie Pizza Alfredo -45 min&lt;br /&gt;&lt;br /&gt;Walnut and Blue Cheese Salad and Golden Raisin Applesauce muffins -30 min&lt;br /&gt;&lt;br /&gt;Vegetable Cobbler -1 hr&lt;br /&gt;&lt;br /&gt;Roasted Salmon and New Potatoes (with spring greens, not arugula) -30 min&lt;br /&gt;&lt;br /&gt;Fish Tacos &amp;amp; Cheesy Corn -45 min&lt;br /&gt;&lt;br /&gt;GF Fusilli with Sausage Artichokes and Sun Dried Tomatoes -30 min&lt;br /&gt;&lt;br /&gt;Baked Potato Bar -15 min&lt;br /&gt;&lt;br /&gt;Over the weeks I've saved the successful recipes and tossed the less-than successful ones.  My goal now is to photo those successes and post them on here.  Eventually I'd like to math out how many calories is in each meal per serving so I can easily schedule the number of calories I ingest per day.  I'll be able to easily compile a list of delicious foods per cooking time and calorie count.&lt;br /&gt;&lt;br /&gt;Per Dr. Weil I'm trying to incorporate fish into our diets at least once a week.  I'm also trying to avoid meat as much as possible.  My hubby (the Celiac) feels that he is already stricken with the gluten free curse, and is against more limitations to his diet. Literally the best recipe for GF muffins, ever!&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;I make six Muffins (for 2 people) in one muffin tin, generally to be eaten with a salad.&lt;br /&gt;Pre-heat oven to 375 degrees.&lt;br /&gt;&lt;br /&gt;Mix together:&lt;br /&gt;1 egg&lt;br /&gt;1/4 cup olive oil&lt;br /&gt;3/4 cup brown sugar&lt;br /&gt;3/4 teaspoon vanilla extract&lt;br /&gt;1/4 cup sour cream (low fat)&lt;br /&gt;1/4 cup applesauce (note: you can use a 1/2 cup of either sour cream or applesauce if you are missing one of these ingredients).&lt;br /&gt;1 cup Pamela's GF Baking and Pancake Mix&lt;br /&gt;1 tsp cinnamon&lt;br /&gt;1 tsp nutmeg&lt;br /&gt;&lt;br /&gt;When mixed add 1/4-1/2 cup (I just grab handfuls) of golden raisins.  I also sometimes add dried cranberries.&lt;br /&gt;&lt;br /&gt;Pour into lined muffin tin.  I use a silicon muffin pan sprayed with olive oil.  Cook for 20-25 minutes, until toothpick comes out dry.  Muffins will be very moist. Or cook fish in oil in skillet. (I've not tried this, we are unhealthy  gluttons with our deep-fryer.)&lt;br /&gt;Mix Egg and GF Beer or Coddled Milk in 1 bowl.&lt;br /&gt;Mix flour, cornstarch, baking powder and salt in another bowl.&lt;br /&gt;&lt;br /&gt;Dip fish strips in wet bowl and then into dry bowl.  Coat fish in flour.  Put into fryer until golden brown (about 5 minutes give or take).  Put finished fish on plate with a paper towel to de-grease.  Make sure to cover fish so they don't cool while finishing the sauce and taco shells.&lt;br /&gt;&lt;br /&gt;Fry corn tortillas into taco shells until golden brown.  We have taco shell frying tools, shown in the below picture on the bottom left.  You can use pre-made taco shells to save this step.  If so warm taco-shells in the oven as per package instructions. Gradually stir in fresh lime juice until consistency is slightly runny. Coat chicken with 1 tablespoon extra-virgin olive oil and add to bag. Coat the chicken evenly in the spices and sugar.  Let sit and marinade while preparing the salad.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span class="bodytext"&gt;&lt;br /&gt;4 plum tomatoes chopped&lt;br /&gt;1 yellow bell pepper, seeded and chopped&lt;br /&gt;1 red onion, chopped&lt;br /&gt;1/4 fresh pineapple, cut into circles and grilled&lt;br /&gt;&lt;/span&gt;&lt;span class="bodytext"&gt;2 limes&lt;br /&gt;3 tbsp olive oil&lt;br /&gt;A handful fresh cilantro leaves, chopped&lt;br /&gt;Salt and freshly ground black pepper&lt;/span&gt;&lt;br /&gt;&lt;span class="bodytext"&gt;&lt;br /&gt;&lt;/span&gt;&lt;span&gt;&lt;span class="bodytext"&gt;Chop and combine the tomatoes, bell pepper, onions.  &lt;/span&gt;&lt;/span&gt;&lt;span&gt;&lt;span class="bodytext"&gt;Place chicken on grill and cook 6 to 7 minutes on each side.  &lt;/span&gt;&lt;/span&gt;&lt;span&gt;&lt;span class="bodytext"&gt;While cooking the chicken grill the pineapple circles until they have grill marks on them.  Add cilantro, squeezed lime juice and 3 tbsp olive oil.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span class="bodytext"&gt;&lt;br /&gt;2 cups chicken stock&lt;br /&gt;1 cup milk or half-and-half&lt;br /&gt;1 chipotle in adobo, finely chopped and 2 teaspoons adobo sauce&lt;br /&gt;3/4 cup quick cooking polenta&lt;br /&gt;1 (15-ounce) can pumpkin puree&lt;br /&gt;2 tablespoons butter&lt;br /&gt;2 tablespoons honey&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Heat the stock and milk or half-and-half in a sauce pot with chipotle and adobo sauce. Whisk in the polenta and thicken 2-3 minutes, stir in pumpkin to warm through. Stir in butter and honey and season with salt and pepper. &lt;span class="bodytext"&gt;&lt;br /&gt;&lt;p&gt;Serve polenta with chicken and salsa salad.&lt;/p&gt;Pumpkin GF muffins would also be delightful with this dish. &lt;a href="http://wheatstateceliac.blogspot.com/2008/06/gluten-free-golden-raisen-applesauce.html"&gt;Follow this basic muffin recipe but replace the sour cream and applesauce with pumpkin puree&lt;/a&gt;. I think he feels since his diet is so limited already it's hardly worth cutting out other foods. I was vegan for a while in college, but got really really sick. Then, when living in India I got even sicker, with the dread bloody poo, and the only thing that would stick for longer than 5 minutes in my guts was holy cow. Great weight loss plan, the dysentery.&lt;br /&gt;One thing we've always avoided since finding out he is a Celiac (2 years ago now) is fast food. We had been working under the mistaken assumption that mono-sodium glutamate was a form of gluten for most of those two years. Recently I was re-reading &lt;a href="http://www.amazon.com/Gluten-Free-Bible-Thoroughly-Indispensable-Negotiating/dp/0805077464"&gt;"The Gluten Free Bible"&lt;/a&gt; (an excellent resource for anybody with a Celiac in the family) and under the things to be wary of monosodium glutamate was not listed. I sat in shock... had we been avoiding things like salad dressings in restaurants (meaning a many dry salad for Bobby) for no reason? Admittedly I had been confused that things containing MSG did not have a warning saying they contained wheat, but I figured it was an oversight on everybody elses part. (Everybody else does not have a highly allergic GFhubby!) After &lt;a href="http://en.wikipedia.org/wiki/Monosodium_glutamate"&gt;more research&lt;/a&gt; I found out the truth. Although a rather nasty additive, it is still safe for Bobby to eat.&lt;br /&gt;Which meant, besides dressings, a couple of cereals (that Hippy cereal is BAD man!) he can now once again purchase terrible tacos and nachos at Taco Bell.&lt;br /&gt;We are going to &lt;a href="http://www.burningman.com/"&gt;Burning Man&lt;/a&gt; again this year. Last year we couldn't go for a myriad of reasons including a huge licensing exam for my job and our wedding. The year before we went, but it was right before he was diagnosed, so we didn't eat wheat-free yet. I am a bit worried about what we will eat for 7-10 days of camping in the desert. It's an entirely pack-it-in sort of environment. I'm obviously going to make some GF-noodles and other things like that, but I've no real grand ideas. However, since the re-admittance of Taco-Bell into our diet the 28 hour drive is saved from starvation. Still have a few kinks to work out, such as weather or not I like the background I made.  It may be too dark. You cut it into small cubes and put it in the oven or in a waffle iron. As it heats up it expands significantly. Then you can stuff it or top it with a variety of things. I've been eating it for breakfast for the past week cooked on a waffle iron (which makes it look like mini-waffles) topped with cream cheese, cinnamon and honey. We living in Kansas, also lovingly known as the &lt;span onclick="BLOG_clickHandler(this)" class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;Wheatstate&lt;/span&gt;.  The purpose of this blog is to share our successes and failures while living gluten free.  &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family: courier new;"&gt;I live gluten free at home (except for the frozen Super Pretzels I keep to eat while Bob is at work or &lt;span onclick="BLOG_clickHandler(this)" class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;otherwisedly&lt;/span&gt; busy) and am working towards living gluten free all the time.
